Sprouts are the first stage of the birth of a plant and it is precisely at this stage that focus the most valuable substances for our body. Sprouts have been born a new plant and that energy and strength required to bring it into being and grow, nourish the body and the spirit of those eating it. The potential energy present in the seed germination is free and is transformed into actual energy, represented by the same spear that the food becomes more "alive" you can imagine and more than any other food pays homage to the maximum governs every healthy diet that "Life is nourished with the Life" ...
The starting point is therefore the seeds sprout. This small grain that our eyes seem lifeless, indeed lovingly holds a wealth of valuable genetic information and nutrients that will be used when right (and in the right conditions) to generate a new life. Of all the seed, the responsible party is called seed germination and is only 3% of the whole seed, but is the most rich in nutrients such as enzymes, proteins, vitamins, minerals, vitamin E (and, alas, is precisely the part that is eliminated in the refining of cereals ...).
But why is it important to introduce the seeds in our diet? Only the germination process allows us to eat the seeds in their raw state by providing a rich food to our body, vital and nutritious. The precious inner life of the seed is assimilated by the body only through the seed sprouts themselves.
During germination occurs a real "awakening organic" proteins doubled and become more assimilated by the body as a pre-digested by enzymes (which makes the shoot a healthy and highly digestible capable of nourishing the mind and body); increase compared to the adult plant vitamins (vitamin C, for example, can increase by 600%) and between different types of vitamins, there is also the B12 (rare in the plant world and therefore of fundamental importance to the vegetarian diet and even more in those where you do not introduce any vegan food of animal origin) that can grow from 200 to 700%. In addition, the shoot is an excellent source of minerals (like calcium, iron, phosphorus and magnesium) and trace elements (zinc and selenium) easily assimilated.
It's really easy to get the buds in our kitchens. You can purchase the "sprouts" in plastic or terracotta floors consist of several trays of round or square overlapping each other, the bottom full of little holes allow water that is used to water the beans, to move from floor to floor and wet seeds placed in each tank. This system allows you to put forth more seeds of different species at the same time, but if we want to save money and still have some good buds and delicious, simply provide themselves with simple glass vessels, a nylon mesh and a rubber band.

The next and last process is the collection: in general we can say that the seeds of cereals reach a length of about 1-3 cm, while those of vegetables also come to 3-6 cm. Are removed from the container and can be cleaned by the integument (the outer cuticle) of the now empty seeds by soaking in a bowl full of water and moving them by hand to remove them from sprouting. However, it is possible (for those who like it) eat the shoot with all the seed coating as it is rich in fiber.
Sprouts can be eaten raw and by themselves gomasio and seasoned with tamari (or oil and salt), or added to salads, soups, risotto, yoghurt, cereals, pasta, ... They are kept in the refrigerator in a glass jar (which prevents the formation of molds) with airtight for about 1 week.
Some clarifications: all seeds can be used to make the shoots, except the tomato, eggplant and peppers because they contain toxic substances (alkaloids) for the body if taken in large quantities. I also remember that you must blanch the sprouts of legumes in a pan with a little extra-virgin olive oil before eating to remove harmful substances.
